Orange, Honey and Habanero Glazed Salmon

The good think about growing up in Sierra Leone is our mostly pescatarian diet. Daily consumption of smoked dried fish cooked in sauces and stews and fried fish for evening snack is very common. Any other forms of meat were kept for special occasions or for such times that I like to call spoil yourself and your family days (SYAYFD), when one would choose to consume beef, chicken or pork. Living overseas though, it's the opposite and our SYAYFD would consist of a fish dish and desert. Today I decided to cook this quick salmon dish which is finger licking good yet easy to prepare.  

Before I start preparing the ingredients, I preheat the oven to 180C fan forced.

 The ingredients I used are: 1.2kg Salmon (4 pieces), 2 habanero chilis, 3 cloves garlic, 2 tbs honey, 2 oranges, salt and pepper, 2 tbs oil.
 Zest and juice the oranges
 In a small saucepan, pour the orange juice and zest, honey, then add the garlic and chili and cook over medium heat for five minutes then set aside to cool down for 5 minutes.
 Whizz the cooled down orange juice mixture and set aside 
 In a hot frying pan, add the oil and sear the skin side of the salmon
Then add salt and pepper and turn down the heat
 Pour the glaze mixture over the salmon and bake in the oven for 5 minutes
 It should look like this
 I served it with cauliflower and brocolli couscous.  Bon Appetit!
