Green Lip Mussels in Tomato and Capsicum Sauce

After three outfit related posts, it's about time a food post graced the blog once again.  So the hubs is an absolute sucker for mussels but due to how pricey sea food can be, we seldom cook it but this week he had to work on Sunday morning so I thought I'd surprise him with this chilli mussel dish which we all enjoyed for lunch.   This dish is so simple, easy to prepare and full of flavor.  If you'd like to try it sometime, keep scrolling to see how I made it.

The ingredients I used are:  2kgs green lip mussels (cleaned), 1 large onion (chopped) 1 large seed tomato (chopped), 1/2 can chopped tomato (I already had this in the fridge otherwise I would have used 2 large fresh tomatoes), 1 tbsp tomato paste, 1 large red and 1 large green capsicum (chopped) 2 small red chillis (chopped), 3 sprigs thyme, 3 cloves garlic (chopped), 1 cup white wine ( I used verdelho) 1 punnet grape tomatoes (for garnishing) chive (for garnishing), olive oil, 2 tbsp butter, salt and pepper
In a medium sized pot over high heat saute onions and garlic in 2 tbsps of olive oil and butter for 5 minutes
Then add tomatoes, thyme and chilli and cook for 3 minutes
Then add wine and let it cook for 5 minutes
Then add capsicum
season with salt and pepper
add mussells, cover and cook for 10 minutes or till the mussel open up
Garnish with grape tomatoes and chives.  Enjoy
