Rice Bread - Sierra Leonean Recipe

Hello and welcome to the cooking wardrobe.  Today, in cooking, I will be showing you my family's way of baking rice bread.  Rice bread is another party favorite in Sierra Leone.  You've got to have it at your party, simply because almost all of your guests would be expecting to have some with ginger beer upon arrival. In Sierra Leone, the ingredients are all mixed by hand in a  calabash (as shown here), poured into a cast iron pot and baked over hot charcoal or wood fire. This is my oven baked version, which I hope you will try, and if you do, let me know how your's turned out.  So let's get baking, shall we? 

The ingredients I used are:

9 medium sized bananas (blended), 4 cups rice flour, 2 cups vegetable oil, 1.5 cups caster sugar, 1 tsp vanilla bean extract, 1 large nutmeg (grated), 1/2 tsp baking powder, 170g tomato paste, 1.5 cups water, pinch of salt.
Preheat oven to 180C fan forced.  In a large bowl, whisk together the banana and sugar.
then add oil, water and rice flour and mix to combine
add the tomato paste, nutmeg, vanilla extract, pinch of salt and baking powder
Mix well  to combine
Pour into well oiled baking dish and bake for 45 minutes to an hour or till a skewer comes out clean when tested.
Let it cool down in the tray for about 20 minutes before cutting and serving. Enjoy!!!!!!!

  3. Elsie, I saw a link to your blog on facebook and visited because I am also from Salone. I tried the recipe for rice bread today and it is delicious. It took a little longer to cook (but that is typical with rice bread anyway) and maybe my oven is not as powerful as others as well... Overall though, I give it a solid A. To add to my excitement, the kids LOVE it and have been asking for more, more, more! Thanks for sharing dear!

  5. Thank you for sharing this recipe. I was trying to make rice acara the other day and maybe my ingredients were off (I swapped goya rice flour for brown rice flour). Every time I put a scoop of the mix into the fryer it would sink and break up into little pieces. So I will convert it to rice bread and call it a day. Thank you and God bless!

    1. Hi Jelena, what a lovely gesture. 2 cups would be 500mls. You can halve the ingredients if you don't want to cook a large piece like this one.
