Stewed Black Eyed Beans with Sweet Potato Chips - Sierra Leonean Recipe

Hello and welcome to The Cooking Wardrobe.  A few friends have been asking me to share a vegetarian recipe, so today in cooking, I am doing a black eye bean dish which is very popular in Sierra Leone.  It is normally cooked with peanut or palm oil, however I am using olive oil for the beans, and vegetable oil to fry the potatoes.  
Ingredients:
2 cups black eye beans, 1 tbs tomato paste, 3 medium sized fresh tomatoes, 2 habanero chilies, 1 medium sized brown onions, 1 large sweet potato, 1/4 cup olive oil, 2 stock cubes, 8 cups water, 3 cups vegetable oil.
In a large sauce pan, add washed beans and 8 cups of waters and cook over high heat till all of the water is absorbed. It took about 40 minutes.
Beans will look like this when cooked. Remove and set aside
In another sauce pan, over high heat, fry chopped onions, chilies, and fresh tomatoes in olive oil for 8 minutes.
Now add tomato paste and stock cubes and cook for 5 minutes.
Lower heat, thoroughly mix through beans and simmer for 5 minutes.
That's the beans done.
Peel and chop potato
Deep fry in vegetable oil till golden brown
Drain on paper towel
I served it with buttered wholegrain toast.  Enjoy

  1. One of my favorite dishes is the beans stew. I cook it most of the time, but i eat mine with fried ripe plantains. Will try the sweet potatoes next time. Another delish meal Elsie. :-)
