Baked Herb Crusted Salmon with Caramelized Beetroots and Carrots

I made this salmon dish for lunch on Sunday and it was a winner.  As with most of my recipes, it's very easy to prepare and very delicious too.  Don't just take my word for it, try it, you won't regret the decision.  

The ingredients I used are: 600gms salmon, flat leaf parsley, chives, 2 cloves garlic, 1 long red chili, 1/2 cup bread crumbs, 1 tsp all purpose seasoning, 3 tbs olive oil.
Pre-heat oven to 180C fan forced.  Wash and chop parsley, chives, garlic, chili and blitz in food processor together with bread crumbs, all purpose seasoning and olive oil.

 Rub mixture on fish as show above, bake for 15 minutes.
I served it with caramelized beetroot and carrots. ENJOY
