Nutmeg Cookies

Hello and welcome to The Cooking Wardrobe.  After a few too many wardrobe posts, I am well overdue for a cooking one and what better way to do it than with a sweet one.  These nutmeg cookies are always a hit with the boys.  They are very easy to make, very yummy and best of all they are home made.  A cup of tea and one of these will take your mind to so many happy places you would not believe it.  

Here's how I made them.
Preheat oven to 180c fan forced

Ingredients:
4 cups plain flour, 2 tsp baking powder, 1 medium sized nutmeg, 2 eggs, 1 tbs vanilla bean extract, 1 tbs golden syrup, 250gms  salt reduced butter (room temperature), 11/2 cups brown sugar
Using a cake mixer, cream butter and sugar till sugar is completely dissolved (takes about 10 minutes)
Then add eggs
vanilla extract
golden syrup
nutmeg
then beat for a further five minutes to combine
Sift flour and baking powder
Add to butter mixture and beat to combine
Spoon mixture unto a cling wrap and wrap tightly to form a log
Refrigerate for 1 hour
cut cookie dough and roll into balls
assemble on baking tray and use a fork to press each ball down on the baking tray and bake for 20 minutes, take them out of the oven and allow to cool in the tray for 15 minutes. 
They come out soft in the middle and all nice and golden outside.  Try it, your taste buds will thank you for the favor.  Enjoy!!!!

  5. Oh yummy! I love to bake but I've never made nutmeg cookies, sounds really good to me! I might try these now that it gets cooler outside. They're probably awesome with a hot chocolate in the evening :)
