Roast Lemon and Herb Pork Belly with Mixed Potato Rosti and Sour Cream and Chives


Hello and welcome.  I am sooooo glad you stopped by my darlings. I was going to share my coconut cookies recipe but today's lunch was so delicious I thought it would be nice to share the recipe so you all can try it too.  Pork belly is not something we have often but I love it so much.  All that fatty sinful goodness (since when did sinful and goodness become friends?) anywho,  makes every mouthful an absolute pleasure.  If you would like to try it, the ingredients you'd need are:
 1.5kg pork belly, 1 medium sized brown onion, 4 cloves garlic, rind and juice of 1 lemon, fresh thyme, fresh oregano, 3 fresh chilis, 3 small potatoes, 4 small sweet potatoes, extra virgin olive oil and salt to taste.
 Put the onions, garlic, chili, lemon, oregano, thyme and salt then add about 4 tbs olive oil and blend till smooth
Pour the mixture over the pork belly and rub it in, then into a pre-heated oven at 180C fan forced for 1 hour, then lower the heat to 150 and cook for another hour.
While the pork is in the oven, peel, wash and grate the potatoes.  I am using the food processor but a hand held grate will do the job.
 Empty it into the baking pan or dish and press down
 Add 100gms butter cut into cubes, a few sprigs of thyme and salt and pepper.
 Then bake for 30 minutes or till the potato is all nice and crunchy on the outside.
Remove the pork from the oven, cut into pieces, plate and serve with the potatoes and a little sour cream and chives.  Enjoy!
