Oven Baked Snapper with Plantains and Stewed Beans


Hello TCW readers! Welcome, welcome!  Hope you're all doing great, especially during this season of reflection and hope.  A time when we reflect on the true meaning of Easter, the suffering, death and resurrection of Jesus Christ.

Back home in Sierra Leone, we would fast throughout the holy month, from Ash Wednesday till Good Friday and only have one meal a day for forty days.  Our Good Friday meal was stewed black eyed beans with plantains and akara so for today's lunch I prepared the beans and plantains which we had with baked snapper fillets.

Please click here for the beans recipe.  I seasoned the snapper with garlic powder, salt, all purpose seasoning, then rubbed a little bit of olive oil on them and baked them in the oven set at 190c fan forced for 15 minutes,
