Apple Cake

This cake is so easy to make, you would not believe it.  You only need eight ingredients, it doesn't take long to mix and before you know it, you are having a cup of tea with a piece of cake.  Most of the ingredients you would already have in your pantry, which makes it even better as you do not have to run to that jungle, called the shops to hunt out ingredients. So lets get baking shall we?

Ingredients I used are:
2 cups plain flour, 5 pink lady apples (peeled cored and chopped into small pieces), 4 eggs, 1 cup vegetable oil, 1 cup sugar, 1 tsp vanilla essence, 1 tsp cinnamon, 1 tsp baking soda 

Preheat oven to 180C fan forced. In a mixing bowl, whisk together the sugar and oil 

Add the eggs and whisk till it all combines

Sift in the flour, cinnamon and baking soda

Then add chopped apples and vanilla and mix with a wooden spoon to combine

Pour into lightly oiled baking dish and bake for 45 minutes.  Check after 30 minutes, if a skewer comes out clean then it is ready.

Let it cool down in the baking dish before cutting.  

A cup of tea and a piece of this cake are a match made in food lovers heaven.
