Many of you would agree with me that most seven year old boys would never, ever ask for vegetables and would do anything not to eat them. My son is an exception to the rule, he eats everything, the only time I could remember that he has refused something was when his best friend slept over at our place and cried because I had cooked fish so in the spirit of being a good friend he also said he didn't like it. He eventually ate it though, when I told him it was "fish-chicken" (fish that tasted like chicken, hello).
Anyway, the other day we were watching master-chef and he saw someone using brussel sprouts and asked me to cook some for him try it (Hallelujah). I was going to cook pasta that day for dinner so I scooted off to the shops got my bag of brussel sprouts and the following recipe my dear readers is the result of my winging at its best.
I used 500g chicken breasts cut into thin slices, olive oil, 400g diced tomatoes, 2 tbs tomato paste, 1 large brown onion chopped, 3 cloves garlic chopped, 1 large carrot chopped, 1 large zuchinni chopes, 1/2 cauliflower chopped, 1 cup each of frozen peas and corn, 300g brussel sprouts, 1chili chopped, 1tsp chicken stock powder, 1 cup water salt to taste and a packet of large spirals

In a large sauce pan over high heat, brown chicken pieces in batches in olive oil |

Then saute onions, garlic and chili for 3 minutes |

Then add carrots and let it fry for 5 minutes |
|
Now add the tomato paste and diced tomatoes and cook for about 6 minutes |
|
Add zuchinni and brussel sprouts and cook for 3 minutes |
|
Add the rest of the vegetables and water, mix well, cover and cook for 10 minutes |
|
Finally return the chicken to the pot, mix well and cook for 15 minutes |

Now here is the finished sauce, which I served with the San Remo large spirals cooked according to packet instructions |

Pasta is one of the most eaten food in my household. I just love food that doesn't take long to cook. I always limit my veggies to carrots, corn, peas and peppers. Will defo try your version with all this veggies minus sprouts cos I hate em. Lol! Thanks for sharing odo. Yummy! :)

My daughter is like your son - she loves veggies (including sprouts! and broccoli!). Though she doesn't like fruit, only berries. Your cooking always looks so homey and so yummy!
ReplyDeleteOh My Goodness! This looks so good Elsie...AND healthy too! I love pasta, and I love brussel sprouts too, but I had never thought to put them into a pasta dish. And I am so surprised and impressed that your son asked for b sprouts. They do have quite a strong flavour for little palettes! I laughed out loud when I read about his solidarity with his friend about the fish. Too cute!
