Coconut Banana Bread

Hello TCW readers!!  Hope you are all doing great.  It's been a minute guys, it's been a whole minute since your girl dropped a recipe and I am making up for it with this bomb coconut banana bread recipe.  Oh, before I show you how I made this banana bread, just wanted to share with you all that I now contribute recipes to a Sierra Leonean magazine called Hidden Voices.  Go check out their website here , grab a copy of the magazine, then come back and let's get cooking.

Ingredients:  2 cups plain flour, 1 cup dessicated coconut (finely grated and dried coconut), 1 cup sugar, 1 cup vegetable oil, 2 eggs, lightly beaten, 5 small bananas. pureed, 3/4 cup milk, 1 teaspoon each of baking powder and bicarb of soda, 2 teaspoons vanilla extract and 1/2 teaspoon salt
 In a large bowl, sift the flour baking powder and bicarb of soda as per above photos
 Then add the coconut
 sugar
 and salt
 mix it all together and form a well in the middle
 now add the oil
 milk 
 eggs
 banana puree
 and vanilla extract
 whisk it all together 
 then pour into a well oiled bread pan and bake for 35 minutes at 170C fan forced or till a skewer comes out clean when tested

 Remove from oven and let it cool down for 10 minutes
