Pot Roast Beef - Sierra Leonean Recipe

Hello and welcome to The Cooking Wardrobe.

The other day someone sent me a message on Facebook for this recipe so I promised them I'll do a post today. Back in Sierra Leone, the beef is cooked over a charcoal grill, which gives it a smokey flavor.  Here in Australia, if I am doing a lot, I would normally cook it in the oven to save myself the hassle.    The ingredients I used are:
676g beef (weighed with my new kitchen scales hehe), peanut butter, tomato paste, 1 large brown onion, dried chilis, 2 stock cubes, olive oil, capsicums (red and green), lemon, garlic.
 In a blender add half of the brown onion (chopped)  and 4 cloves of  garlic
The add the dried chili and blend to a smooth paste
Add the paste to the beef which I have cut into bite sizes
Then add a tablespoon of peanut butter
1 tablespoon tomato paste
2 stock cubes
2 tablespoons olive oil (you can use any oil you like)
The juice of 1 large lemon
Mix it all together
Cook over medium heat for 20 - 30 minutes or till the beef is tender.  I did not add water because the beef releases its own juices which should do the trick, however you can add a little water if its too dry
Turn off the heat when the beef is tender
Add chopped capsicums and the rest of the chopped onion and let it cool for 10 minutes
After 10 minutes, it should be cool enough to skewer
And here is the finished product.  So yummy!!!
