My Christmas Table - Stuffed Boneless Turkey

HAPPY NEW YEAR my beautiful readers, this is part two of the series My Christmas Table.  You can find the recipe for my part one puff puffs here.  Every Christmas table deserves a turkey and this couscous stuffed turkey is the business. Put in it's rightful centre position on the table with different salads surrounding this baby and my lunch party was going places.  If you would like to recreate this beauty, keep reading.
Ingredients: 1/2 large turkey (deboned) 1 medium sized brown onion (chopped), 1/4 cup each of toasted pine nuts and dried cranberries, 1/2 cup couscous, 2 spring onions (chopped) 1 tbsp minced garlic, 1 tbs chicken stock powder, 1 tsp chili powder, 60gms baby spinach, 2 tbsp olive oil, 1/2 cup water.
 To do the stuffing, add the olive oil to a frying pan over medium heat then add the chopped onions
and minced garlic and saute for two to three minutes
 then add the chili and stock powder and mix to combine
 now add the couscous
 then the water
  spring onions
 pine nuts
 and cranberries then turn off the heat and cover the frying pan and allow the couscous to absorb the juices.  It will take about 5 minutes.
 Now stir through the baby spinach and its ready
 spread the stuffing evenly on the turkey
 then roll
 looks so pretty (I like to lay the wing on top before tying)
tie the turkey with some butcher's string (I did up to this step on Christmas eve and kept it in the fridge)
 On Christmas day I got it out of the fridge and put it in my roasting pan, drizzled with olive oil
covered it with foil and roasted it in a preheated oven at 180C for 1 hour
 then I removed the foil and returned it to the oven for 45 minutes
 then I transferred it onto my chopping board, covered it with foil and let it rest for 10 minutes
then sliced and served it.  Till next time, enjoy!
