Spiced Apricot Cake

Hello TCW foodies!  Before I go any further, please do yourself a favour and cook this cake because you will not regret it.  This soft apricot cake with apricot glaze is all sorts of deliciousness on a plate. This is that close your eyes and savour the goodness kind of cake, I kid you not.  This cake came out of the oven and my sensible eating plan went straight out of the window😏👧.  Can you blame me?
So if you want to be like me, here is how I made it
I used: 150gms butter melted,  2 cups flour, 820gms canned apricots drained and pureed, 1 cup sugar, 2 eggs, 1 tsp baking powder, 1/2 tsp each, ground ginger, cinnamon, cloves and nutmeg, 1 tsp vanilla extract. 122 cup milk and a pinch of salt
mix the milk, butter and eggs in a bowl
In a large mixing bowl, mix together the flour, sugar, spices, baking powder and salt
then mix in the apricot puree
 add the wet ingredients
 whisk till its all combined
 pour into loaf pans
bake at 180c fan forced for 25 minutes
to make the glaze, i used 2 heaped tablespoons of apricot jam and two tablespoons of water, heat over low heat till the mixture is nice and smooth.  It takes about five minutes
when the cake is cooked, while still hot, brush on the glaze, return to the oven for 5 minutes
Remove and let it cool down a bit.  Serve with ice cream  Enjoy.
