Hello all, it's been a minute and I must say I have missed you all my darlings. Well as you all know blogging is not easy and it is time consuming. Of late at the end of everyday, I feel like I need two more hours to do stuff. Twelve started high school and his after school activities has been taking a lot of my time. Okay enough of feeling sorry for myself here, afterall you only stopped by for the recipe right?
Today I have prepared Sierra Leone's most popular sauce, cassava leaves, cooked in coconut oil and cream, with chicken. So delicious, trust me, it is! Hungry yet? Scroll down for the ingredients and see how I prepared it.
I used:
2 cups of water
250 grms of cassava leaves
250 grms chicken,
100 grms dried baramundi
200 grms coconut cream
150 grms coconut oil
1 heaped tbs peanut butter
1 tbs ogiri (fermented sesame seeds)
1 small brown onion
3 habanero chillies
6 small okra
2 stock cubes
salt to taste
In a medium sized pot over high heat add chicken and water and cook for 10 minutes
Add fish and cook for 5 minutes
Then add ogiri and cook for 2 - 3 minutes
Now add the cassava leaves and let it cook for 5 minutes
Add coconut cream
and coconut oil
Cook for an additional 6 munites
then add the peanut butter and let it cook for 5 - 6 minutes
now add the blended chillies and onion, stir and let it cook for 3 minutes
then add stock cubes
and okra and salt to taste, lower the heat and simmer for 10 minutes
It will look like this when ready
Serve with steamed rice. Enjoy
