Sierra Leonean Coconut Biscuit (Coconat cake)

Hello TCW readers and recipe lovers.  Hope you are all trying your best in this chaos of a world we live in now.   Today I am sharing a recipe from the motherland Sierra Leone and it's a special request from one of my readers.  What I love about Sierra Leonean recipes is the simplicity of it all.  Just a few ingredients put together with love and you are done.   

 The ingredients I used are: two fresh coconuts, 11/2 cups sugar, 3 cups flour, 1/4 cup coconut oil, 1/4 cup water, 1/2 tsp salt.
Preheat oven to 160C fan forced. Shell coconut and finely grate, then add flour to the coconut and mix together.
 Then mix in the sugar
then add the salt
 and coconut oil
 knead the dough in the bowl
 then add water and continue to knead till its well mixed 
 spread the dough onto a foiled baking tray
 mark into squares
 bake for 30 minutes or till its brown
 take it out of the oven and let it cool down for ten minutes 
 Break apart and serve.  This will keep in an airtight container for up to a month but it won't last that long though.  Enjoy
