Pigsfeet and Pork Rasher Soup - Ghanaian Style

Hello everyone!  HA! I can't believe it's almost the end of 2018 already. Well they say time flies when you are having fun.  Don't entirely agree with that statement though. Sometimes things happen and you lose yourself for a bit and by the time you fully awaken to the reality of it all, a big chunk of time seems to have evaporated just like that.  

Anywho I am back to blogging and today I bring you this very delicious pigsfeet and pork rasher soup.  Who says soup is only for winter months?  As far as I am concerned soup is for everytime I feel like having some.  This is a family recipe so if you try it, please let me know on social media.  Oh while I am at it let's connect on insta @thecookingwardrobe.  Now to the recipe.

 You will need:500 grams pork rasher, 1kg pigs trotters, 1 brown onion, 1 large fresh tomato, 1 tbs tomato paste, 2 habanero chili, 2 cubes stock cubes, 1 handful smoked dried fish.  
Wash trotters and boil with two tablespoons salt for 10 minutes, remove from heat and discard the water and return the pot to the heat.
 Add chopped pork rasher and 1 tbs olive oil and fry for 3 minutes
 Add smoked fish and tomato paste and cook for 2 minutes
 Then add stock cubes, whole chilis, tomato and onion.
 Then add 4 cups of water
 Bring to boil, lower the heat to medium, cover and let it cook for 1 hour
 Remove the cooked chili onions and tomato, let them cool down a bit then blend 
 Add to the soup with a cup of water and let it simmer on low heat for 40 minutes
 Enjoy!
