Lemon Cake - So Moist, So Delicious

I love my food.  Can you tell?  hahaha.  I love food and cooking so much so that today after service one of my Jamaican friends said anytime she sees me she thinks about parties and cookouts.  Her next question was,  so when are we having another party?  Now I have some planning to do.  Any excuse will do I tell you.  No shame dear friends, no SHAME.  For lunch today we had buffalo chicken wings with salad and flat bread and this moist lemon cake went down nicely with a dollop of whipped cream afterwards. Just look at the that.  Okay, let me show you how I made it.  
250g unsalted butter (at room temperature), 4 large lemons, 4 large eggs, 1tbs lemon essence, 1 cup caster sugar, 2 cups self raising flour
 Preheat oven 160 c fan forced then collect the rind of all four lemons.
 Then juice the lemons
Measure the sugar into a large mixing bowl
 Then add the butter, cubed
 Whisk the sugar and butter till well combined 
 Then crack the eggs and beat to mix the yoke and egg whites
 Then whisk the eggs into the butter mixture 

 Then whisk in 1 cup flour
 Then the lemon rind
 And essence
 Then pour in half of the lemon juice and whisk to combine, then add the rest of the flour whisk, then the remaining lemon and give it a final whisk till the mixture is smooth
Spoon mixture into well oiled baking pan (I used my loaf tins but it comes out pretty if you use a round cake tin) and bake for 30 minutes.
Remove from the oven, let it cool in the tin before turning it out of the baking pan and serve with cream or whatever you like.

  5. I love lemon cake!!! I buy a tray of it and eat it all up in a space of 3 hours. All by myself too. True story. Kudos babe, I know I've said it before but I'll say it again anyhow. You got skills darling!
