Sugar Free Carrot Cake with Honey Cream Cheese Frosting

Hello TCW readers, welcome!  Today I decided to cook a sugar free carrot cake for dessert as we have been consuming lots of chocolate lately all in the name of trying to get rid of the Christmas gifts before they expire πŸ˜ΈπŸ™ˆ.  Surprisingly it turned out really well, soft and finger licking good.
 Preheat oven to 170C
Ingredients: 200gms melted butter, 2 cups grated carrots, 2 cups plain flour, 2 overripe bananas, 1 teaspoon each of baking powder and bicarb soda, 4 eggs, 1 cup chopped walnuts, 1 1/2 cups dates, 1 cup chopped almonds, 1 cup boiling water.
 Soak the dates in the boiling water and leave for 10 minutes to soften
 Pour the dates and water into a food processor and blend into a paste
 then add bananas and blend till smooth 
 then add flour
 baking powder and bicarb soda
 and melted butter and pulse to combine
 then add the eggs and pulse again to combine
 pour the mixture into a large bowl
 then fold through the carrots
 then mix in the nuts
 pour into a well oiled baking tin and bake for an hour or till a skewer comes out clean when tested
cool the cake on a rack or tray
 For the frosting, I got the hubs and 10 to whisk  3 tablespoons of room temperature cream cheese, 1 tablespoon butter, also at room temperature and 2 tablespoons of honey till light and fluffy
 I then flipped the cake over onto a plate, poured and spread the frosting over
 and voila, carrot cake goodness πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹
